In 2021, Wils joined the list of Amsterdam’s Michelin-starred restaurants. It takes its name from the architect of the Olympic Stadium and surrounding buildings, Jan Wils. With his design, he brought the Olympic fire back to the Games, held in Amsterdam in 1928. In the building across the street, restaurant Wils occupies the third floor. It has an American style, that feels both grand and intimate.
At Wils they honour the true primal power of all kitchens: fire. It will constantly demand your attention. A charcoal grill, old school ovens, here they cook with raw power, and Chef Joris Bijdendijk and his team control it masterfully. Steamed quail is given a deliciously crispy crust on the grill, roasted quail is served in marinated koji with red chicory, apple and onion gravy.
